Merry Sugar Cookie Baking

122107-baking5.jpg

Sorry 'bout the recipe hijacks recently. ;) It's the reason I haven't made any cards. Eek!

Last night, I braved an awful snow storm to drive over to Annie and Amber's to make sugar cookies. Yum! These are the best, if I do say so myself. Here are some fun shots of the evening. The sugar cookie recipe is at the bottom. Seriously it's a really good recipe. Try it. :)

Sour Cream Sugar Cookies

1-1/2 cups sugar
2 sticks margarine
1 egg
2 tsp. vanilla
1 cup sour cream
4-1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt

1. Cream together sugar and margarine. Add egg, vanilla, and sour cream. Add dry ingredients. Mix well, but only until flour is incorporated.
2. Refrigerate and shape.
3. Place on lightly greased baking sheet. Bake at 425° for 5 minutes (or longer if they're a bit thicker... just watch the first batch and then adjust the cooking time accordingly).

EDITED TO ADD: I changed the "cube" of margarine to "stick" of margarine. That happens when it's a family recipe, ya know?

Also, the icing! It's just Martha's royal icing recipe. See it here. There's also a video of Martha using the royal icing. Enjoy! :)

These look great! How did you get the frosting to look so smooth? Oh, and if you add 2 tsp. cream of tarter to the recipe they will be extra soft. I forgot to email you Laura's recipe. Okay, so now I'm also motivated ... everyone is sick today (Liza was up last night with a bucket by her head, while I slept on the floor next to her; and I barely have a voice), so we're not going anywhere today ... maybe we'll pass the time making cookies! Thanks for sharing!

Wow! You guys have patience! I don't think I could make my cookies that pretty ... the icing is usually slathered on them and dripping off the sides. Ha ha. :)

Thanks for the recipe!

Like everyone else, I wanna know what a "cube" is??? I couldn't find an email addy for you on your blog -- did I miss it? Otherwise, I would've emailed you directly. And if you have a recipe for the frosting, that would be wonderful as well. These look so yummy and I'm in the midst of my cookie baking. Better late than never!

Luv your cookies, BE U TE FUL!!

I too, make cut cookies. It's a family tradition. The only exception is the icing. I use cream cheese icing: one 8 oz. cream cheese, 1 tablespoon butter, 1 teaspoon vanilla, enough powder sugar for spreadable consistency. You cant get as detailed, but you can use sprinkles!

I enjoy your blog very much!

Heather:

Kristina -
Question -- when you make cookies like these, how long does it take for the royal icing to dry?
Heather C

Kristina says: Hey Heather! Well, this was my first time using this particular icing, but I'll tell you how it was the first time. It was pretty set up after 5-7 minutes, although it didn't get super hard. It had a slight crust on it, but it was still pretty moldable. You couldn't stack the cookies on top of each other or anything without destroying your icing below.

After I let them sit overnight, those that were out in open air were definitely hard, but by doing that, it sacrificed the soft texture of the cookie. Those that were lightly covered with parchment paper (just to keep fresh) looked and tasted wonderful.

Hope that helps!
